Mini Pizza - My So-Called Hawaiian Pizza

A very easy savoury snack to prepare, especially when you are craving for Pizza.. Yummy!!

Mini Hawaiian Pizza
Serve 6 (as sides/snacks)
Ingredients:
6 Sandwich Thins (Helga's newest bakery)
140 gr Pineapple pieces (canned)
2 thick slices Luncheon Meat, cubed
Kraft Perfect Melt 
Pure Tomato Paste - canned (or Ketchup)
Dried Thyme
Oil for pan fry the Luncheon Meat

Method:
  • Preheat oven to 220'C
  • Heat a little bit of oil, and pan fry the cubed luncheon meat until it turns brown and slightly crisp, set aside, remove excess oil with paper towel
  • Drain pineapple pieces from its juice, set aside
  • Spread tomato paste on every slice of sandwiches
  • Sprinkle dash of dried thyme on each sandwiches
  • Top sandwich slices with pineapple pieces and cubed luncheon meat
  • Sprinkle enough cheese on the top of each sandwiches
  • Bake for 10-15 minutes (or until cheese has melted)
  • Serve Warm

P.S: simply heat up in microwave for 10 seconds for left over

BBQ Tempeh

Fresh from the oven...

Triggers my mind to have'em a bite!!



The fragrance was just oh-so-nice!!
The texture was just oh-so-delicious!!

And the colour was just oh-so-tanned and oh-so-sexy!!

From this moment, i know biting a thickly sliced tempeh was just oh-so-blessed!!


























They are just the greatest gift from GOD * Bear with me!! i am getting exaggerating*

But, i couldn't help myself to stop over-describing...

Just because they were simply yummy!!

BBQ Tempeh
Serve 5-6 (a possibilty to be reduced to 3-4 serving, because they are really yum, hehehe...)
Ingredients:
2 blocks Tempeh, thickly sliced (250 gr each block)
Lots of Garlic, peeled ( i used 1 1/2 whole Garlic)
Lots of Shallot, peeled (i used 4 Shallots)
Kecap Manis (Sweet Soy Sauce) - i used 2 tbsp *approx*
Salt and Pepper

Method:
  • Using Mortal and Pestle, coarsely pound the garlic and shallots
  • In a bowl (or ziplock bag), combine pounded garlic, shallots, kecap manis, salt & pepper. Mix well
  • Add in tempeh, toss
  • Marinade for at least 4 hours (best leave overnight) in the fridge - i left mine overnight
  • Next day, line the baking tray with aluminium foil, lightly grease with olive oil
  • Arrange tempeh on the baking tray, oven-bake for 20 minutes *approx* (10 minutes each side) in a 220 degree heated oven
  • Serve warm

"Oven Roasted" BBQ Pork Ribs

Never expected i can whip-up such a heavenly tasty Pork Ribs dish : 9

All thanks to this rainy days, where i can spend mostly my working time to browse some goodies! Ooops!!! 

All credited to this blog - Figareau Thank you!! a BIG thanks for posting up such a wonderful recipe on your blog. 

I didn't own some of the ingredients listed on Figareau's blog; didn't want to spend any single penny to buy those ingredients to accomplish this dish, i omitted some,and of course added some as well : )

But i do follow every single steps from Figareau of handling the Pork Ribs... 
Isn't it seductive?


























"Oven Roasted" BBQ Pork Ribs
Serve 3-4 
Ingredients
1 Huge Pork Loin Rib Roast (approx 1.5 kg), skinned
1 Bottle of Beer
2 Dried Chipotle Peppers (i omitted)
1 Big Red Onion, diced
5 Cloves of Garlic

Marinade and Sauce
1 cup Brown Sugar*
4 tbsp Ketchup*
4 tbsp Dark Soy Sauce*
2 tbsp Worcesterchire Sauce*
Few drops Rum Essence (i couldn't get the pure Rum at that time *so sad*)**
4 tbsp Sambal ABC (ABC Chili Sauce)**
1 tsp Dry Mustard

*All of the ingredients mentioned above can be found at Figareau. I mixed the sauce based on my personal liking, it was just approximated measuring method, was just using my sixth sense that time :p
** I couldn't get the pure rum that time, in fact i did not know where to get it?? Anyone?? 
**Instead of Chipotle Chili Sauce, i swapped to ABC Chili Sauce as i always own one at home - is a MUST!!

Instead of grilling, i oven roasted the pork ribs at 220 degree celcius for 15 minutes on both sides while keep basting with the marinade sauce on the ribs' surface.... 

For Garnish, i chopped up a quarter of Red Onion; a stalk of Spring Onion; and two Red Chillies.
So Tender.. So Juicy...

Baked Egg Cake - 鸡蛋糕


























Weekend means i need to spend my lovely time in the kitchen : )

Using some simple ingredients that i could find at home, surprisingly, this Egg Cake turns out fragrantly and fluffy...

Baked Egg Cake
Make 1 loaf
Ingredients:
6 Eggs
180 gr Sugar
1/2 tsp Vanilla Essence
180 gr Plain Flour (Sifted)
1/2 tsp Baking Powder
Pinch of Salt
1 drop of Yellow Colouring
Olive Oil to grease the loaf pan


Method:
  • Crack 6 eggs in a mixing bowl, whisk for 5 minute using an electric hand mixer or until it turns pale and fluffy.
  • Add in sugar and vanilla essence, whisk for further 5 minutes using an electric hand mixer.
  • Fold in sifted plain flour and baking powder, add in salt and yellow colouring.
  • Combine well with egg batter.
  • Lightly grease loaf pan with olive oil.
  • Pour in cake batter.
  • Preheat oven to 160 degree, bake for 1 hour.
  • Cooling down the cake before cutting.
Can be served as an afternoon snack or.....
For breakfast tomorrow : )

Mad-licious Triple Combo Cookies

Chocolate, TICKED!!

Peanut Butter, TICKED!!

This already sounds exciting.....

It won't take the whole box of your Darell Lea, only 6 pieces, i promise....

But i need to destroy your lovely look, so sorry....

Make 48 Mini Cookies
Ingredients:

  • 100 gr Chocolate (coarsely chopped)
  • 200 gr Peanut Butter
  • 100 gr Strawberries (coarsely chopped)
  • 125 gr unsalted Butter
  • 100 gr Icing Sugar
  • 260 gr Plain Flour (sifted)
  • 1 Egg
  • 1 tsp Salt
  • 1 tsp Baking Soda
Method:
  • Place butter and sugar in a mixing bowl, hand mix until the batter turns crumble.
  • Crack-in 1 egg, fold well with batter mixture.
  • Add in sifted plain flour, mix well.
  • Add in chocolate, strawberries, peanut butter into the batter, combine. 
  • With a spoon/hand, scoop a ball of batter, flatten.
  • Placed on tray lined with baking paper. Space 2 cm of each cookie batter.
  • Preheat oven to 120 degree, Bake for 45-50 minutes.

























Patience is required... Disaster happened in a 200 degree heated oven, just 15 minutes.. Uh-Oh!!

Baked Cheesy Pineapple Fried Rice

Nothing special!! just a plate of fried rice ....

Trying to make something different, i put grated cheese on the top of the fried rice.. YES!! CHEESE!!


Holy Cheeseeeeeeeeeee ..............!!!!

I command oven to make-over my fried rice into ........



Oh-so-sexy yet sinful Cheesy Pineapple Fried Rice : )

Serve 1
Ingredients
1 portion of rice (1 day old preferred)
1/4 White Onion
1/4 Green Capsicum
2 slice Canned Pineapple Ring
2 Shitake
1 Lap Cheong (Chinese Sausage)
1 Egg
Grated Cheese ( I use Cheddar, but Parmesan preferred)
Oil for cooking (I use Olive Oil)
1 tsp Chicken Powder
1/2 tsp Turmeric Powder
1/2 tsp Curry Powder
Dash of Fish Sauce
Dash of White Pepper
Dash of Black Pepper


Method:

  • Chop white onion, green capsicum into desired size.
  • Slice canned pineapple ring into bite size.
  • Soak shitake in hot water for 5 minutes, and chop into bite size.
  • Slice lap cheong into bite size.
  • Heat up wok with oil on medium heat.
  • Put in white onion; shitake and green capsicum, stir fry until soften.
  • Add in lap cheong; pineapple; rice, combine with white onion and green capsicum.
  • Sprinkle a dash of fish sauce.
  • Crack one egg, stir well with fried rice.
  • Add in chicken powder; turmeric powder; curry powder; white pepper and black pepper.
  • Stir well, until rice turn into yellow colour.
  • Arrange nicely in oven-safe dish.
  • Finally sprinkle with grated cheese.
  • Preheat oven to 150 degrees, oven-baked for 15-20 minutes.
  • Serve warm

Not a Baking Master!!

I have a Saturday Class tomorrow!!
To discuss in-depth about strategic management
Just simply because i am taking a short course for this trimester
Will be end by this December!! yay!!

And hurray!! i failed a subject - Media Planning & Buying
I was such a lousy picker - this was actually my elective subject (i can choose any subject i am interested with)

Never know that, i was actually felt into a TRAP!!
The lecturer was a CRAZY Top Hard Marker 
yet didn't delivering us a good lecturer..
She thought we were as SMART as Isaac Newton : (

I am so ready to fail, that's why i didn't feel upset at all!!
I actually celebrated that day by had some sushi treat with Monica, hehehe...

I have to pay for another subject, and OF COURSE i choose other!! (not a dumb)
I took International Markteting as an Online Course - which will be ended by this coming February (will be doing this subject during my holiday in Indonesia later )

Back to topic!!
According to my plenty experiences of having a Saturday class
There will be no food around college!! food court will be closed, and everywhere will be very quiet!! 
My college is located at business/office district - that's why!!

I have made some finger food then : )
I hope my lecturer and classmates' tooth will be fine after swallowing my Dates Muffin, lol!!
I hope it will not be too hard for them!!
